I am definitely a victim of lame lunches. In the two or three minutes that I typically have for lunch prep, I usually end up with a very odd – or just plain boring – meal. (Case in point: Last week, my lunch consisted of a PB&J, an avocado and a tomato. Unclear what I was planning to do with these items.)
On the rare days when I bring a fun lunch, it really brightens my day. It’s something to look forward to all morning, and a great way to break up the day. So, below, I’ve outlined some totally easy, and super fun, recipes for a fun lunch break. Prepare them at night for an effortless morning. Let’s revamp our lunches together!

You can use canned chicken breast for these, but prepping the chicken yourself does make a big difference in flavor. Just buy some raw boneless, skinless chicken breast. Boil it, let it cool and shred it with a few forks. Bam. Fresh chicken!
Bonus points if you add avocado!
Chipotle is oh-so-tempting, but we can save oodles of money and calories with this healthy, homemade version!
